WNYGFDSG - Information from the Workshop with Shelley Case

It was an honor having Shelley Case come to Buffalo and speak to our group and to the many professionals in our area about current research and information regarding Celiac Disease and the gluten-free diet..

Shelley is so knowledgable and yet so down to earth.  She gave the group many helpful ideas and good, current information. She also kept us all laughing.  She is quite an amazing person.

Going Gluten-Free:  A Primer for Clinicians    Although written for clinicians, the information is well written, clear and full of charts and lists of foods. (It is in a PDF format) (This is also included on our website under Celiac Primer)

Great meal chart for adding more nutritional value to your gluten-free meals. It is a very handy guide to print out. This was included in participants packet of information.

Cream Hill EstatesHere's the site Shelley mentioned that will change our lives.  This company is coming out with SAFE OATS (they are guaranteed pure)!! They will be on the market sometime in November, according to Shelley and will include rolled, whole, and oat flour.  WOW!

Gluten-Free Diet: A Comprehensive Resource Guide -by Shelley Case, RD This book is a wonderful resource.  Shelley told us that she is currently completing a revised edition. You can order it directly from this site. This page will also give you a good overview of the contents of the book.
